SANTOKU KNIFE
The Santoku knife is the Japanese version of the chef’s knife, and as such is all-purpose. Unlike its Western counterpart, however, the Santoku has a more limited rocking motion. The straight wide blade is ideal for slicing, dicing and chopping, especially with regards to vegetables. The width of the blade is also very useful for scooping up sliced food off of a cutting board to put into a pot or pan. It comes in two sizes, 13 & 18cm.
